One-Pan Mushroom Spinach Parmesan Pasta

Golden mushrooms, garlic and pasta all simmered in one pan until silky with Parmesan. Hardly any washing up.

One-pan pastas feel a bit like a magic trick. The pasta cooks right in the broth, its starch thickens everything, and you end up with a creamy sauce and only one pan in the sink. This mushroom and spinach version is the one I make most.

Flavor in layers

1. Brown the mushrooms until they're golden. Don't stir them too much; let them sit and color. 2. Add garlic and herbs to the pan for a minute. 3. Cook the pasta in broth so it soaks up all that flavor. 4. Finish with cream and Parmesan for a silky sauce. 5. Fold in spinach at the end for color and freshness.

Make it yours

Serving

Garlic bread and a Caesar salad make it feel like a night out.

Leftovers keep for 4 days. The sauce thickens in the fridge, so add a splash of milk or broth when reheating.

Short shapes like penne, fusilli or orecchiette cook evenly in the broth.
