Friday nights at my house are often 'gyro night'. Everyone builds their own, there's always too much tzatziki (no such thing) and it takes far less effort than it looks. The secret is a lemony marinade and a tzatziki with crumbled feta stirred in.
Why you'll love them
Juicy chicken marinated in lemon, garlic and oregano.
Creamy feta tzatziki, a little salty and very addictive.
Fresh crunch from lettuce, tomato and onion.
Easy meal prep: make the chicken and sauce ahead.
Tips for the juiciest gyros
Marinate longer. Thirty minutes is fine; a few hours is better.
Use thighs if you like extra juicy chicken.
Rest before slicing. Five minutes keeps the juices inside.
Squeeze the cucumber in a clean towel so the tzatziki stays thick.
Don't overfill the pita or it'll tear.
Variations
Spicy: chili flakes in the marinade.
Oven-baked: 400°F for 20 to 25 minutes.
More veggies: cucumber, olives, roasted peppers or shredded cabbage.
Low-carb: lettuce wraps.
What to serve with them
Roasted potato wedges, a Greek salad, hummus with pita chips or a simple rice pilaf.
The cooked chicken keeps for 4 days and the tzatziki for 3.
Juicy lemon and oregano marinated chicken in warm pita with crisp vegetables and a creamy, tangy feta tzatziki. Weeknight Greek night.

Questions, answered
Can I bake the chicken instead?
Yes. Bake at 400°F for 20 to 25 minutes, then rest and slice.
Why squeeze the cucumber?
Grated cucumber is full of water. Squeezing it keeps the tzatziki thick and creamy.
Can I make it low-carb?
Serve the chicken and tzatziki in lettuce wraps or over a Greek salad.
