This is the kind of dinner you set up in 15 minutes and forget about. The chicken cooks low and slow until it falls apart, and a creamy garlic parmesan sauce with sun-dried tomatoes and spinach turns it into a restaurant style meal.
Thighs stay juicy through the long cook, and the sun-dried tomatoes add a sweet, tangy note that makes the cream sauce taste rich without being heavy.
Spoon it over pasta or mashed potatoes so none of the sauce goes to waste, or serve it with crusty bread for dipping.
