I always thought coleslaw was a bit boring until I started adding apple. Now it's my favorite side for anything grilled. The apple brings sweetness and juice, the cabbage brings crunch, and the dressing has a nice tang from cider vinegar and mustard.

Crisp Apple & Cabbage Slaw

Why it's so good

Tips for the crunchiest slaw

Pick crisp apples and leave the skin on for color.

Use lemon juice so the apples stay bright.

Don't overdress. Start with most of the dressing and add more if needed.

Chill briefly. Twenty minutes is enough for the flavors to come together.

Questions, answered

Which apples stay crisp?

Honeycrisp, Gala, Fuji and Pink Lady. Avoid soft, mealy apples.

How do I keep the apples from browning?

Toss the matchsticks in lemon juice as soon as you cut them.

Can I freeze it?

No. Cabbage and apples lose their crunch when frozen.
