Steak bites are the fastest way to a steakhouse style dinner at home. The cubes sear quickly, stay juicy in the middle and soak up a rich garlic butter sauce.
Parboiling the baby potatoes first means they crisp up golden in the same skillet in minutes, so the whole meal is done in about 30 minutes with one pan to wash.
Serve it straight from the skillet with a green salad or steamed green beans.

Instructions 6 steps
1
Cook the potatoes
Boil the halved potatoes in salted water for 6 minutes until just tender, then drain well.
2
Season the steak
Pat the steak cubes dry and toss with the paprika, salt and pepper.
3
Crisp the potatoes
Heat 1 tablespoon of the oil in a large cast iron skillet over medium-high heat. Cook the potatoes cut side down 5 to 6 minutes until golden, then move them to a plate.
4
Sear the steak
Add the remaining oil. Cook the steak in a single layer 2 to 3 minutes per side until browned, working in two batches if needed.
5
Make the garlic butter
Lower the heat, add the butter and garlic and cook 30 seconds until fragrant. Stir in the Worcestershire sauce.
6
Toss and serve
Return the potatoes to the skillet and toss everything in the garlic butter. Sprinkle with parsley and serve hot.

Questions, answered
What cut of steak works best?
Sirloin is a great mix of flavor and price. Ribeye or New York strip also work.
How do I cook it medium rare?
Sear 2 minutes per side. The cubes will keep cooking a little in the garlic butter.
Can I skip boiling the potatoes?
Yes, but cut them smaller and pan fry 12 to 15 minutes until tender.
How do I store leftovers?
Keep in an airtight container in the fridge up to 3 days and reheat in a hot skillet.
