What makes it special
Egg noodles
Whenever someone at home is under the weather, this pot goes on the stove. It's the classic chicken noodle soup, but with a good knob of fresh ginger and extra garlic. The broth turns golden and smells incredible.
What ginger and garlic add
Ginger gives a gentle, peppery warmth that makes the broth taste brighter. Garlic adds savory depth. They turn a simple soup into something you'll want even when you're not feeling poorly.
Tips
Grate fresh ginger on a fine grater. Ground ginger isn't the same here.
Cook the aromatics briefly so they stay fragrant, not bitter.
Watch the noodles. They keep softening in the hot broth, so pull the pot off the heat when they're just tender.
Finish with lemon. A small squeeze right before serving lifts everything.
Easy variations
Spicy: red pepper flakes or a drizzle of chili oil.
Asian-style: rice noodles and a few drops of sesame oil.
Greens: stir in spinach or zucchini for the last 5 minutes.
Low-carb: zucchini noodles, or no noodles at all.
Serve it with
Crusty bread or garlic toast and a simple green salad.
Storing
Keep it in the fridge for up to 4 days. To freeze, leave out the noodles and freeze for up to 2 months, then cook fresh noodles when you reheat.

Questions, answered
Can I use rotisserie chicken?
Yes. Skip simmering the raw chicken and stir in shredded rotisserie chicken with the noodles.
Can I make it in the slow cooker?
Add everything except the noodles and cook on low for 6 to 7 hours. Add the noodles for the last 30 minutes.
Is it too spicy for kids?
No. Fresh ginger adds warmth, not heat. Most kids don't even notice it.
