What makes it special
Milk of choice
Cinnamon
I started making pink lattes as an afternoon swap for coffee. They are calming, pretty and caffeine-free, so I can have one at four o'clock and still sleep.
Where the color comes from
Beetroot powder is simply dried, ground beets. A teaspoon whisked into warm milk turns it a soft, rosy pink with no artificial coloring at all. On its own it is a little earthy, but vanilla and cinnamon turn it into something cozy and sweet.
What it tastes like
Creamy, gently sweet, lightly spiced, with just a hint of earthiness in the background. Friends who claim to hate beets have finished whole mugs.
Make it yours
Vegan: use oat milk and maple syrup.
Extra creamy: use barista oat milk or light coconut milk.
More spice: add a pinch of cardamom or ginger.
Iced: shake everything with cold milk and ice.
Bedtime: add a pinch of nutmeg and skip the collagen.
A small shortcut
Mix the dry ingredients (beetroot powder, cinnamon, salt) in a jar so you only need a spoonful each time. Add the warm milk, vanilla and sweetener when you're ready for a cup.

Questions, answered
Does it taste like beets?
Only very slightly. The vanilla, cinnamon and milk soften the earthy flavor into something mellow and sweet.
Is the collagen necessary?
No, it's completely optional. Leave it out and the latte tastes the same.
Can I make it dairy-free?
Yes. Oat, almond or coconut milk all work; barista oat milk froths the best.
