This is the kind of dinner you set up in 15 minutes and forget about. The chicken cooks low and slow until it falls apart, and a creamy garlic parmesan sauce with sun-dried tomatoes and spinach turns it into a restaurant style meal.

Thighs stay juicy through the long cook, and the sun-dried tomatoes add a sweet, tangy note that makes the cream sauce taste rich without being heavy.

Spoon it over pasta or mashed potatoes so none of the sauce goes to waste, or serve it with crusty bread for dipping.

Yes. Cook them 3 to 4 hours on LOW so they stay juicy.

Why did my sauce look thin?

Cook it uncovered on HIGH for 10 more minutes or add a little more of the cornstarch mixture.

What can I serve it with?

Pasta, rice, mashed potatoes or crusty bread all soak up the sauce.

How do I store leftovers?

Keep in an airtight container in the fridge up to 4 days and reheat gently with a splash of milk.
