Nachos are my answer to 'what should we eat while we watch the game?' and they're always gone in minutes. The trick is building them in two layers on a big sheet pan, so you never end up with a pile of naked chips at the bottom.

Loaded Sheet-Pan Nachos

Why you'll love them

Tips for perfect nachos

Sturdy chips. Restaurant-style chips hold up to the toppings.

Two cheeses. Cheddar for flavor, Monterey Jack for melt.

Bake, don't broil. The cheese melts evenly and the edges don't burn.

Fresh toppings after baking. Tomatoes, avocado, cilantro and lettuce stay bright and crisp.

For a party

Double everything and use two sheet pans. Set out bowls of salsa, guacamole and sour cream, and let everyone dig in.

Leftovers keep for 2 days. Reheat in the oven.

Questions, answered

Which chips work best?

Thick, restaurant-style tortilla chips. Thin ones break under the toppings.

Can I add meat?

Yes. Seasoned ground beef, shredded chicken or pulled pork are all great.

How do I reheat leftovers?

Bake at 375°F for 5 to 7 minutes. The microwave makes them soggy.
