Wings are my go-to for game nights, and I stopped frying them years ago. With a few tricks, the oven gives you wings that are crunchy outside and juicy inside, and then they get tossed in a sticky honey BBQ glaze.
The four tricks for crispy oven wings
1. Dry them really well. Moisture is the enemy of crispy skin.
2. A little baking powder. It helps the skin blister and crisp in the oven.
3. Use a wire rack. Hot air flows all around the wings, so no soggy bottoms.
4. High heat. 425°F renders the fat and crisps the skin.
Sauce at the end
Toss the wings in the glaze only after they're crispy. A final 5 minutes in the oven sets the sauce into a sticky coating without making the skin soft.
Flavor variations
Spicy: hot sauce or cayenne in the glaze.
Honey garlic: extra honey and minced garlic.
Maple: maple syrup instead of honey.
Chipotle: a smoky chipotle BBQ sauce.
Serve them with
Ranch or blue cheese dressing, celery and carrot sticks, coleslaw, fries or corn on the cob.
Storage
Keep leftovers in the fridge for 3 days or freeze them for 2 months. Always reheat in the oven to bring back the crunch.

Questions, answered
Why baking powder?
A little baking powder helps the skin dry out and blister, so it gets crispy in the oven. Don't use baking soda.
Can I make them spicy?
Add hot sauce or a pinch of cayenne to the glaze.
How do I reheat leftovers?
Bake at 375°F for 10 to 12 minutes. The microwave makes them soft.
